Cherry is a yellowy-orange brown wood and sometimes has streaks of green. The sapwood is distinct from the heartwood and is a pale beige colour. Often the sapwood cracks badly when drying so it can be difficult to get the contrasting colour succesfully into a blank or square. Having said that you want mostly heartwood as that is where the colour and figure is. Cherry turns easily and finishes very well.
Burr cherry is rare and sometimes its just a swirling figure rather than tight knots like burr elm, for example.
